How brewing temperature affects extraction, solubility and flavour, and why one temperature is not right for every coffee.

Temperature affects extraction

Hotter water generally increases the rate at which many soluble compounds move from ground coffee into water, but the relationship is not identical for every compound.

Recipe ranges

Filter brewing is often performed near the high 80s to mid 90s Celsius, but the appropriate temperature depends on roast, grind, method and coffee. Espresso equipment may operate under different thermal conditions.

Light versus dark roast

Lighter roasted coffee can sometimes benefit from more thermal energy, while darker coffee may extract readily. This is a useful starting heuristic, not a fixed law.

Temperature is one variable

Dose, grind, contact time, agitation and water composition interact with temperature. Changing temperature alone does not guarantee a predictable flavour change.
