What freshness means for roasted coffee, why it changes after roasting and why there is no single universal freshness date.

Freshness is a changing state

Roasted coffee continues to change after roasting. Gases escape, volatile compounds evolve and oxidation and other physical and chemical processes alter the sensory profile.

Fresh does not mean immediately roasted

Coffee often needs time after roasting for gases, especially carbon dioxide, to redistribute and escape. The useful brewing window depends on roast, packaging, grind, brew method and preference.

Freshness is multidimensional

A coffee can retain some desirable characteristics while losing others. Aroma freshness, flavour clarity and physical gas content do not necessarily decline at identical rates.

Storage controls the rate

Oxygen, moisture, temperature, light and package properties influence how roasted coffee changes. Good storage slows unwanted changes rather than stopping them completely.
