Aroma versus taste

Taste detects basic modalities such as sweetness, sourness and bitterness through receptors in the mouth. Aroma is largely driven by volatile compounds reaching the olfactory system, including retronasally while drinking.

Where aroma comes from

Some volatile compounds exist in green coffee, while many are created or transformed during roasting. Grinding releases trapped gases and exposes a large surface area.

Why coffee smells different when ground

Grinding rapidly changes the surface area and allows volatile compounds and carbon dioxide to escape more readily. This is one reason freshly ground coffee can smell dramatically different from whole beans.

Aroma is context-dependent

Temperature, concentration, brewing method and sensory adaptation influence what a drinker perceives. Aroma descriptors are useful communication tools, not proof that a coffee literally contains the named fruit or spice.
