Coffee oils

Coffee contains lipids that contribute to the physical properties of roasted coffee and can carry or influence aroma compounds.

Filter papers and oils

Paper filtration can retain a substantial portion of coffee oils compared with brewing methods that allow more fine particles and oils into the beverage. This is one reason filter coffee can have a different mouthfeel from French press or espresso.

Storage implications

Lipids are susceptible to oxidation. Oxygen exposure and time can contribute to stale or rancid sensory notes as coffee ages.

Not all oils are the same

The visible sheen sometimes seen on dark-roasted beans is not a direct measure of flavour quality or freshness. Roast degree, bean structure and storage history all matter.
