The coffee plant
Coffee is produced from the fruit of species in the genus Coffea. Commercial production relies mainly on Coffea arabica and Coffea canephora (commonly called Robusta). The plant is a woody perennial shrub or small tree whose growth and fruiting are strongly influenced by climate, soil, water, altitude, shade and management.
Roots, stems and leaves
The root system anchors the plant and takes up water and nutrients. Stems carry water and assimilates through the plant, while leaves provide the photosynthetic engine that supplies carbohydrates for growth and fruit development.
Flowers and fruit
Coffee flowers develop in clusters at leaf axils. After pollination and fruit set, the ovary develops into a coffee cherry. The cherry contains skin, pulp and mucilage around the seed, which is the green coffee bean after processing and drying.
Why plant biology matters
Variety, plant age, nutrition, disease pressure and environment all affect yield and cherry development. This is one reason a named variety cannot be treated as a guarantee of flavour: genotype interacts with its growing environment and subsequent processing.
