How roasted coffee loses desirable sensory qualities over time and the role of oxygen, moisture, heat and packaging.

What staling means

Staling describes unwanted changes in roasted coffee that can reduce aroma freshness and alter flavour. It is a gradual process rather than a single event.

Oxygen

Oxygen exposure can accelerate oxidation and sensory deterioration. Packaging that limits oxygen exposure can therefore extend useful freshness.

Temperature and moisture

Higher temperature and increased water activity can accelerate some deterioration processes. Keeping roasted coffee cool and dry is generally helpful, while condensation should be avoided.

Not all change is bad

Some coffees are deliberately rested or aged for a period after roasting because their sensory balance can change as gases dissipate. “Older” and “stale” are not exact synonyms.
