Coffee Degassing

Why roasted coffee releases carbon dioxide, how degassing affects brewing and why timing matters.

Gas is produced during roasting

Roasting creates carbon dioxide and other gases, some of which remain trapped within the porous roasted bean.

After roasting

Gas gradually escapes from the coffee. This is commonly called degassing. The rate varies with roast level, bean structure, grind size, temperature and packaging.

Why espresso is sensitive

Freshly roasted coffee can release enough gas during espresso brewing to influence flow and extraction. A short resting period can make shot behaviour more predictable, although the ideal timing depends on the coffee and recipe.

Grinding accelerates release

Grinding dramatically increases exposed surface area, allowing gases and volatile compounds to escape faster. Ground coffee therefore generally loses freshness faster than intact beans.
