Origins of espresso machines
Espresso emerged from nineteenth-century efforts to brew coffee quickly for individual service. Early machines were very different from modern pump-driven systems.
Pressure and steam
Early designs used steam pressure and later lever systems to force water through coffee. The technology evolved substantially during the twentieth century.
Pump espresso
Modern commercial machines commonly use pumps and dedicated brewing circuits. Pump pressure ratings should not be confused with the pressure actually maintained at the coffee bed during extraction.
Global café culture
