Bitterness in Coffee

Bitterness is a taste

Bitterness is detected through taste receptors and can arise from numerous compounds in coffee. It is a normal part of coffee perception, not automatically a defect.

Roasting

Thermal reactions change the chemical composition of coffee. Darker roasting can produce more compounds associated with bitter, roasty and smoky perceptions, although roast colour alone does not predict bitterness perfectly.

Extraction

Extraction conditions can increase the concentration of bitter compounds. Grind size, contact time, temperature, water and flow all interact.

Bitterness and balance

Some bitterness can contribute structure. Excessive bitterness, particularly alongside dryness or harshness, may indicate that the recipe or coffee is out of balance.
