Why protocols matter
A protocol creates a shared method so coffees can be compared with fewer preparation differences. It does not remove all human variation.
Controlled variables
Dose, grind, water, temperature, vessel, timing and tasting sequence can all be standardised. The exact protocol depends on the purpose of the assessment.
Descriptive versus affective assessment
Descriptive assessment asks what characteristics are present or perceived. Affective assessment asks about preference or perceived quality. Separating them helps avoid confusing description with judgement.
Standards evolve
The SCA currently publishes Coffee Value Assessment standards and lists further standards under development. The coffee industry should therefore treat current protocols as documented systems that can change over time.
